Donna M brings you her magnificent Blueberry Oatmeal Muffins

 

Ingredients

 

  • 1 cup rolled oats
  • 1 cup low-fat buttermilk
  • 1 cup whole wheat flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/3 cup brown sugar
  • 1 egg beaten
  • ¼ cup avocado oil
  • 1 teaspoon lemon zest
  • 1 cup blueberries, fresh or frozen

 


 

INSTRUCTIONS

 

Step 1

Preheat oven to 400 °F and line 12 muffin cups with paper liners.

 

Step 2

Combine oats and buttermilk, let stand while preparing other ingredients.

 

Step 3

In a large mixing bowl, whisk together flour, salt, baking soda, baking powder and brown sugar. Add beaten egg, oil and lemon zest to oat mixture and mix well.

 

Step 4

Add oat mixture to dry ingredients, stirring until just moistened.
Gently fold in the blueberries.

 

Step 5

Fill muffin liners 2/3 full. Bake for approx. 20-22 minutes until lightly brown and toothpick comes out clean.
