Sharon Trujillo’s brings you her scrumptious Spinach Egg Burrito

 

Ingredients

 

  • 2 Eggs
  • 3 Slices of Turkey Bacon
  • 3 cups fresh spinach
  • 1 cup Spanish onion
  • 1 large burrito wrap (whole wheat, low carb, gluten-free if desired)
  • 1 tablespoon extra virgin olive oil
  • 1 ounce of feta cheese (type is optional)

 


 

INSTRUCTIONS

 

Step 1

First cut up turkey bacon into small cubes and place in a pan lightly coated with olive oil until lightly browned, then throw in your onions and reduce heat until onions are soft. Put off to the side.

 

Step 2

Next, lightly coat the pan with olive oil and sauté fresh spinach until soft. Put off to the side.

 

Step 3

Then take your 2 eggs and scramble them lightly and put in a low preheated pan and add cheese. Move around until cooked halfway through and then begin to add in the spinach, bacon, and onion on medium heat.

 

STEP 4

Continue to scramble until all items are mixed and finally, empty contents into your wrap and roll from front to back while folding in the sides.
